By “raw” honey understand such that is not subjected to any heat or other treatment, free of impurities and is not homogenized. The honey commercially available is at least pasteurized, thereby losing its antibacterial properties, antioxidants and the activity of the enzymes. In fact, the same will happen with the raw honey, if you warm it up.

But how to distinguish the real raw honey?

There are many ways, but its main feature is that several months after it is removed from the hive, it will become candied. The only exception is the acacia honey, which contains a lot of fructose and this crystallization process can take years.
